Winter soup series: Smoky sweet potato & tomato

INGREDIENTS

1 tbsp oil

2 cloves garlic (crushed)

1 onion (roughly chopped)

½ tsp smoked paprika

2-3 medium sweet potato (approx 400g, peeled & diced)

1 tin chopped tomatoes

1.2ltr vegetable stock

Salt & freshly ground black pepper


METHOD

  1. Heat the oil and gently fry the onion and garlic for around five minutes.

  2. Add the smoked paprika, sweet potato and seasoning. Cook for a few more minutes.

  3. Add the tomatoes and stock, bring to the boil and simmer for about 20 minutes or until sweet potato is soft.

  4. Adjust seasoning, puree half and enjoy!
