Winter soup series: Smoky sweet potato & tomato

INGREDIENTS
1 tbsp oil
2 cloves garlic (crushed)
1 onion (roughly chopped)
½ tsp smoked paprika
2-3 medium sweet potato (approx 400g, peeled & diced)
1 tin chopped tomatoes
1.2ltr vegetable stock
Salt & freshly ground black pepper
METHOD
Heat the oil and gently fry the onion and garlic for around five minutes.
Add the smoked paprika, sweet potato and seasoning. Cook for a few more minutes.
Add the tomatoes and stock, bring to the boil and simmer for about 20 minutes or until sweet potato is soft.
Adjust seasoning, puree half and enjoy!
