Winter soup series: Spiced leek

Serves 4
Prep time 10 mins
Cook time approx 30 mins
INGREDIENTS
1 tbsp oil
500g potatoes (peeled & cubed)
1-2 leeks (washed & shredded)
½ tsp ground coriander
1 tsp medium curry powder
1.2ltr vegetable stock
Salt and freshly ground pepper
METHOD
Heat the oil in a large pan and sauté potato and leek for around five minutes until leeks begin to soften.
Add the coriander and curry powder and cook for a further two minutes.
Add the stock, season with salt & pepper, bring to the boil and simmer for 15-20 minutes.
Adjust seasoning, puree half and enjoy!
